The Sympa-PI Classique product line is wide and diversified, and includes both Standard and Specialty barrels. Bordeaux and Burgundy style barrels and 300 liter and larger containers are available with various finishings and options. Multiple toasting options are available to create the oak style and characteristics you are looking for.

Sympa-PI's Standard  barrel line provides the winemaker numerous options for barrel aging their respective wines. All of the barrels in this line benefit from Sympa-PI’s careful and discriminating wood selection and are air seasoned for 24 months and options include: French or Eastern European oak, barrel shape and size, grain selection, stave and head thickness, and a variety of toasting levels. The Standard range gives the winemaker the opportunity to select the options that work best for their fruit characteristics and specific winemaking style within an economical pricing framework.

Sympa-PI Toasting Options: The standard barrels in the Classique product line offer your choice of the following toasts. The majority of our customers choose the Medium and Medium plus toast options.

  • Light toast (LT): emphasizing the fruit, bringing structure and fat
  • Medium toast (MT): dominance of fruit and great aromatic complexity
  • Medium plus toast (MT+): presence of toasted notes integrated with the elegance of the fruit
  • Heavy toast (HT): presence of dominating empyreumatic notes

Three distinct styles of barrels available - Bordeaux, Burgundy and Large Format – with multiple configuration options for Bordeaux and Burgundy barrels.

Bordeaux 225L barrels:
Tradition:

  • French or Eastern European oak
  • Tight and medium grain selection
  • Air seasoned for 24 months in wood yard
  • 22mm stave thickness and 22mm head thickness
  • 6/8 Iron hoops and 4 wooden hoops with 2 head bars

Chateau Ferree:

  • French or Eastern European oak
  • Tight and medium grain selection
  • Air seasoned for 24 months in wood yard
  • 22mm stave thickness and 22mm head thickness
  • 8 Iron hoops with 2 head bars

Transport:

  • French or Eastern European oak
  • Tight and medium grain selection
  • Air seasoned for 24 months in wood yard
  • 27mm stave thickness and 27mm head thickness
  • 6 Iron hoops

Transport 22:

  • French or Eastern European oak

Burgundy 228L barrels:

Large Format Barrels: Available in 300L, 350L, 400L, or 500L sizes.

The use and characteristics of a large format barrel are very different than other barrels, and must be understood as such. The surface to volume relationship is very different and the thickness of the staves allows less oxidative process than a normal wine barrel. These large barrels tend to preserve the vineyard character by minimizing both oak extraction and oxidation. Large format barrels provide slower maturation without drying out the fruit. Because of the lower surface to volume ratio, the wine has less oak contact less pronounced oak extraction.
