Potassium Bitartrate (Cream of Tartar), powder, NF. Used as a seeding agent to promote tartrate precipitation in cold stabilization. Add to wine at the rate of 3-5 grams per gallon, followed by vigorous stirring. Stir the batch daily. It is not a substitute for chilling the wine, but will aid in getting tartrates to drop out faster at any otherwise effective temperature.

cold stabilization

I am the winemaker for Salado Winery Company. Our grapes in central Texas are loaded with potassium leading to a real struggle to get the wines cold stable. I am so glad I finally tried this product! It has definitely increased the speed of crystal formation. For reference, check out https://extension.psu.edu/cold-stabilization-options-for-wineries
