Description

Viniflora CH16 Malo-lactic Culture, 1.5 gram and 15 gram packet sizes. We proudly offer premium quality malolactic cultures from Chr. Hansen laboratories. Viniflora CH16 is a freeze-dried pure culture of Oenococcus oeni. It is a heterofermentative malolactic bacteria which has been selected to ensure a fast and safe malolactic fermentation when inoculated directly into wine. It has an excellent all around tolerance towards pH, temperature and SO2. The culture is especially appropriate for conducting fast malolactic fermentation in high alcohol red wines (up to 16 % vol.) with a pH value above 3.4. In wines with lower alcohol levels the fermentation is even faster.

The 1.5 gram sizes can be added directly into up to 66 gallons of wine; The15 gram sizes can be added directly into up to 660 gallons of wine. Simply dump in and stir. Optimum use is just after onset of primary ferment or shortly thereafter. Store it in your refrigerator if you will be using it within 3 months, otherwise use a freezer. Use the whole packet the day you open it, as it is anaerobic. Keep warm (room temp) to ensure the bacteria are able to thrive.
