Zyme-O-Color, liquid pectic enzyme.


Zyme-O-Color is a maceration enzyme recommended for the treatment of red grapes to optimize the extraction of intracellular compounds such as tannins, anthocyanins and aroma compounds from the skins during fermentation. Zyme-O-Color also leads to increased color stability, especially when combined with tannins, as well as enhanced mouthfeel. Since bentonite is a protein absorbing agent, bentonite must be added after contact time.


Dosage:


2 - 37 mL per ton of grapes or 150 gal of must


2 to 20 drops per 5 gallons of must.

Directions for Use

Zyme-O-Color Liquid can be diluted in a small quantity of cool water before addition in the tank. This allows for better dispersion. Sprinkle over the grapes as they proceed to the press or add during a pump-over before alcoholic fermentation.

Eye protection is recommended. In case of contact with eyes, rinse thoroughly with water.
