Packaged in convenient 5 gallon pails, the Spanish Must is natural and unprocessed. The Must is from the Catalan region of Spain which is populated with fiercely independent people grow grapes that reflect their history. The grapes develop to full ripeness with respect to brix, seeds and phenolics, while still maintaining excellent chemistry. Rich color extraction and density of flavor are signatures of these grapes.

 

This blend is dominated by Grenache Blanc, with a splash of Muscat Alexandra and Macabeo for bright aromas that jump out of the glass. The locals prefer fermenting to bring out the beautiful fruit aromatics, but is also exceptional on oak.
