D47 screams and dies in cranberry at pH below 2. But with some help EC1118 does the job that no other yeast I have used can do. Does not enhance wine nearly as well as D47, but what can you do? Yes I have tried NaHCO3 to raise the pH. You can do a little, but not enough for other yeasts to survive.
